The American Ham is the perfect cut for gatherings and large crowds. With a little less marbling but skin still intact, this ham relies on its bone and outside fat content for its indulgent, classic flavor.
Our pork is brined in a heritage, german organic spice blend (no nitrates or nitrites) with fresh spring water from the valley we reside in. Shortly after, it is cold smoked for eight hours with our unsprayed apple wood. As always, we feed our pigs non-gmo, corn-free, soy-free, custom milled grains that are fermented in our raw jersey milk.
